Matt's Off Road Recovery runs them on almost everything and he gets results. Snow, sand, rock....they seem good in all conditions.
Considring what he drives, and what he uses them for, Matt probably isn't too worried about noise or tread life. Also, I think he may be sponsored by Milestar - so there is that. I don't think Rudy has them - yet, or with the recent axle upgrade, he might have some older used ones for now.

Patagonia has sponsored a few projects (the Golden Nugget) but he's been running them since he started his channel. Rudy had duratracs until he rebuild his XJ, now he's running Milestars too.
 
Old worn out tires are going to be noisier than brand new ones, especially if there's any uneven wear. However, get a few miles on the MT's and that noise will creep up on you.

Having owned 2 sets of Wildpeak AT3 (P metric and E Load) and 2 sets of Pats (E Load and D Load) I agree with the above. The Pars are definitely louder when broke in although not loud by MT standards. You also feel them much more when cornering compared to an AT tire. Those large widely spaced tread blocks on the shoulders create the classic MT feel when riding on them.

The Pats are an excellent tire for the price. Lightweight, very tough and decently quite for an MT. I picked up a set of 315/75/16s for $209/ea. Tough to beat that price for MTs in that size.
