I just put 285's on a few weeks ago. I find that I bounce around a bit more, not jarring, more like floating. But it doesn't feel less stable . I put 285/75R16's

255/85/16

Stability reduced slightly.
Has the characteristics of an obviously taller tire.

so going from 265 75 16 to a 285 75 16 will make my car much more unstable??
or it will be not too much of change?

i would think going to a bigger size would provide more stability with the added weight and width.

i went from a 265/70 to a 265/75, my only concern is that when the speedometer shows 65mph, i'm really going approx. 67.21 mph. Is there any type of re-calibration needed to sync this? is this how the ORs come out of the showroom?

You have to remember, it's an SUV not a car. It should be driven like an SUV. Meaning, the 1" larger tire isn't going to make it any more dangerous given you don't drive it like a Vette.
