So what are the "default" and most common setups people use? Fogs down low, pencils up high?

Totally depends on what you want them for. An all around usage set-up would do great with just driving lights. However, a lot of trophy trucks use a pencil beam/cornering beam set-up.
And to tell you honestly, I have no idea what "Eurobeams" are...

I have pencil beams in the center and driving lights on each side tweaked out to the sides just a tad. With all four on they light up the highway curb to curb.

On the roof rack I have driving lights in the middle and fogs on the outside. They're meant to be off-road lights, so I wanted the fogs to give me light off axis. Lights up the trail quite nicely.
