I've had my iPad sitting on the seat in mapping mode, and it has worked just fine.

Agree with Brunnie...I've been using Gaia GPS on my iPhone for years and have never had an issue with it. So, no reason to think it would be any different using the iPad.

UPDATE 5/26 - I had a chance to do some pretty decent off-roading with this setup and there was very little-to-no bouncing, so I'm very happy with it!
